Hi Three to Five tribe! Although the colder fall and winter months beckon us to warm up with heartier fare like savory cauliflower gnocchi, sometimes you just want something easy, light and quick. Here is a super simple recipe for my favorite sunflower spinach salad.
Sunflower Spinach Salad
Ingredients:
- 2 cups spinach
- 1/2 avocado
- 1-2 tablespoons raw sunflower seeds, unshelled
- 1-2 slices of Pederson’s sugar-free bacon
- 1/2 – 1 grilled chicken breast, sliced
- 1-2 tablespoons Trader Joe’s Green Goddess Salad Dressing
Directions:
Add all ingredients to a large salad bowl then gently toss and enjoy!
