Hi Three to Five Tribe! Summer is starting to heat up and if you are looking for a quick, easy and delicious recipe for breakfast, lunch or a quick on the go summer snack, try this recipe for chocolate chia seed pudding.
Chocolate Chia Seed Pudding Recipe
- 2 tbsp black chia seeds
- 1-2 scoops of Vital Proteins Collagen
- 1/2 cup coconut milk
- 1 tsp cocoa powder (Optional)
- 1/2 banana, sliced (Optional)
- 1/4 cup walnuts (Optional)
- Cinnamon (Optional)
1.) Place all ingredients in a bowl or glass and stir together. Place in the refrigerator for 20-30 minutes or until chia seeds absorb all of the coconut milk and have turned into a gel like substance. Top with walnuts, bananas and cinnamon. Enjoy!
You can also top this chia seed pudding with your favorite fresh fruit slices, unsweetened coconut flakes, a spoonful (or two) of nut butter or a handful of nuts. If you don’t feel like a chilled pudding, pop it in the microwave for 30-60 seconds and enjoy a warm bowl of chia seed pudding instead. It’s like oatmeal, except with chia seeds.
