Hi Three to Five Tribe! As summer rolls into the city all I can think about is staying cool…and getting a tan. #itsalifestyle
As I write this, Chicago is currently pushing 89° and yes my air conditioning is turned on full blast. The heat and humidity are making me think about that summertime treat everyone loves – ice cream!
Since the start of March, I have adopted a Ketogenic lifestyle (because fat is your friend), so I wanted to share a sweet treat that will keep you cool this summer while keeping up with Keto. #thatketolife
Chocolate Coconut Avocado Mousse
Chocolate Coconut Avocado Mousse! Okay, so it’s not exactly ice cream, but if you are looking for a healthier alternative to traditional ice cream, that is also Keto friendly, then this Chocolate Coconut Avocado Mousse is for you.
P.S. I believe you should totally enjoy a traditional ice cream cone at least once during the summer months (okay maybe more than once), #noshame
- 1/2 an avocado
- 1 cup coconut milk (Be sure to read your labels! Look for labels that include coconut milk + water and that’s it). #lessismore
- 1 tablespoon cocoa powder
- Optional: Looking for more fat? Add 2 tablespoons of almond butter (Again, read your labels!)
1.) Add all ingredients into a blender and blend on high 30-60 seconds or until creamy.
2.) Store in the refrigerator until ready to serve.
3.) Once ready to serve, pop in freezer 15-30 minutes for an added chill.
4.) Top with cocoa nibbs (beware, they are bitter!) or add an array of berries for an added touch of sweetness. I recommend raspberries or sliced strawberries from the local farmers market!
