The Perfect Stew for a Snow Day

“Winter is the time for comfort. For food and warmth.” – Edith Sitwell

Hi Three to Five Tribe! ‘Tis the season for cold winter weather, snow, and comfort food.

If you live in the Chicagoland area (or any state in the Midwest for that matter), you know we are supposed to get hit with a big snowstorm this weekend. If the grocery stores were not already busy enough with people shopping for Christmas parties and holiday dinners, they are even busier now with people stocking up for this big snow storm headed our way.

If you are making your list (and checking it twice – see what I did there), #tistheseason then I have the perfect Whole30 approved recipe that will warm your heart and soul, not to mention fill your stomach with good for you food!

Whole30 Approved Beef Stew

Add these basic ingredients to your grocery list then grab that crockpot and let’s get cooking!

  • Beef, chuck roast (More commonly labeled stew meat)
  • Potatoes – Any kind #yourchoice just avoid sweet potatoes for this dish – too sweet
  • Carrots
  • Sliced onions
  • Peas – Avoid if on a Whole30
  • Beef broth (You will need two cups so make sure you grab a big enough box!)
  • Parsley
  • Salt & Pepper

Note: Amounts for each ingredient are not included as they will depend on the amount of people digging into this delicious dish!

Throw everything in the crockpot and step away, I repeat, step away. Just like that – you are done! #easypeasy Well make sure you set the crock pot to either low, medium, or high depending on how much time you have to cook.

I prefer low and slow, so I usually get this going first thing in the morning when I wake up and then I let it cook/simmer all day long stirring on occasion. When the beef falls apart with the poke of a fork, you now this dish is done!

The best part? This dish is 100% Whole30 approved (well leave out the peas if you are on a Whole30), but if peas are the worst thing you eat that day, then we will consider that a win.

I hope you all survive the storm (I will believe it when I see it) and give this stew a go sometime this winter season!

Happy Crock Pot Cooking Ya’ll!
P.S. I see snowflakes…

Live Healthy, Happy, & Fabulously,
-ox
